Mint Chocolate Torte...

So yesterday I desperately wanted to bake and I wanted to bake something I don't usually bake. What came to mind?? A torte! A mint chocolate torte to be exact! Super easy and delicious! I didn't bake it quite long enough, but it still tastes good! The recipe called for 8 ounces of semisweet chocolate, but even I, chocolate fanatic, thought it was a bit too chocolatey! The recipe was very simple, just melt a stick of butter with the chocolate in a double boiler, whip cream, set that aside, whip three eggs and two tablespoons sugar, fold chocolate into egg mixture, then fold in the cream bake in a water bath at 325 for about 25 minutes and that should do it! Mmmm, Vintage Santa Cookies...

So, right after Christmas my Grandmother, mother, and I went to Ace Hardware and I found the cutest cookie book ever! It is a Santa cookies cookbook with vintage recipes. So this Friday my best friend, Miss Victoria, and I have a cookie making/television watching party...now she lives in Oregon and I'm stuck in California so this is not a literal, get together, talk, and actually see each other kind of party. It's more of a talk on the phone while making chocolate chip cookies and watching the same exact episode of Downton Abbey in perfect synchronisation kind of party. Ideal? No. Still fun? Heck yes it is. Anyhow, I found a chocolate chip cookie recipe in this new book of mine and I shall report on it when these cookies are made!

Snickerdoodles!

Hello lovely's! So last week I made my "famous" snickerdoodles! Every time I make these they are a huge hit! They are Martha Stewart's recipe, of course! It says to use course salt, but I don't usually...this time I did! I prefer the regular salt, but my mom likes the chunks of sea salt! These cookies are pretty simple too. They're in Martha's cookie book and they are my favorite!



These turned out flatter than usual, but they taste just as good!

Well Darn!

So brilliant little me decided to make raspberry scones today! Well, that turned out to be a terrible let down! First I added way too many raspberries and so I said to myself, "Okay no biggie, I'll just make a double batch!" Bad idea. My dough was too crumbly. I added more half and half. Bad again. Too runny. I added flour and more flour and more flour!!!!!! It was still too sticky!!!! So I just covered my now overworked dough in flour and made my little scone triangles. In the oven they go...5 minutes go by and I realize that I forgot to add the sugar on top...so out of the oven they go and then after a quick cream and sugar coat back in they go! A whopping 35 minutes later I'm left with doughy, burnt bottom, scones. I hate the trial and error of baking! I'll get it next time!!

Craving Cake!

So here I am bored stiff and wanting something sweet...we have nothing to bake with, but we do have boxed cake!! Yay for us and since it's just for my girly, sweet-lovin' self I decided to go for it! Now what kind???


Strawberry!! Why? Because it's pink!! Duh. So boxed cake is super super easy!!! Which is why people use it!!! Mix together the water, oil, eggs, and pretty pink mix...


Oh la la!!!

In the oven you go my pink friend!! Cooking...cooking...cooking...


Ding!! I'm not one for timers...although I have a really cute cupcake shaped one...anyhow so I just stick a toothpick in my cakes every so often until it comes out with sugary little crumbs! Okay. Time to decorate! I wasn't much in the mood for pretty...I wanted to eat the darn thing!!




So regular vanilla frosting from a jar...yum...with a spoon please! And then powder the top with cocoa and a sieve...little item in which you place powdered sugar or cocoa and it comes out looking like snow, no clumps...the name of my crappy little box cake? Chocolate Covered Strawberry cake!!!! Yummy yum!!!

The Lowdown On Boxed Versus Scratch...

So...my fellow baking friends, I thought a good way to start off would be my opinion of boxed "baking" versus baking by scratch. I personally refuse to bake from a box unless I'm only baking for myself. Don't get me wrong! Boxed cake is delicious! However, if I plan on giving someone some baked goods and want to say "Hey I baked these for you!" Then I am obviously going to actually bake from scratch. I don't think that a boxed cake deserves an "I baked this for you!" So, all in all, bake from scratch for others and from a box for your sugar craving self! You go girl! Kisses!
